There is a certain reverence to a well-made knife — something I came to understand long before I ever considered making them myself.
My journey began in professional kitchens, where a knife is far more than a tool. It becomes an extension of the hand, a constant companion through long hours of disciplined work. Yet, it wasn’t only the act of cooking that drew me in — it was the quiet ritual that surrounded it. The careful sharpening, the considered maintenance, the time taken to restore an edge to perfection. Those moments demanded patience and attention, and in them, I found a deep respect for the craft behind the blade.
Over time, that respect evolved into curiosity. I became increasingly aware of the hands behind the tools I relied on every day, and the idea of creating something of my own began to take hold.
The defining moment came years later while travelling in Perth with my wife. During that trip, I visited the team at Chefs Edge, where I was introduced to a knife by Leszek Isikon for the first time. It was an experience that shifted everything. The balance, the precision, the undeniable sense of intent in the piece — it revealed a level of craftsmanship I hadn’t yet encountered. In that moment, admiration turned into conviction.
When I returned home, I didn’t hesitate. I invested in the tools and committed myself to learning the craft.
What followed was a relentless pursuit of understanding — of steel, of form, of process — and a dedication to creating knives that carry the same sense of purpose and refinement that first inspired me. Each piece I make is shaped by that journey: rooted in the discipline of the kitchen, guided by a respect for tradition, and driven by a desire to create something enduring.
